Colorado Springs Carboy

COLORADO SPRINGS, Colo., (Jan. 6, 2026) — Carboy Winery, one of Colorado’s most dynamic and fast-growing wine producers, will open a new tasting room and restaurant in Colorado Springs in summer 2026, just as the winery approaches its 10-year anniversary and nearly a decade of winemaking in Colorado.

The new location, set to open at the former Old Chicago site off I-25 and Woodmen Road, will be Carboy’s fifth tasting room, marking a major milestone for the winery as it continues to expand its statewide presence.

Founded in Littleton, Colorado in 2016, Carboy Winery has grown from a pioneering idea into a leading voice in Colorado’s modern wine movement. Over the past decade, Carboy has helped reshape perceptions of Colorado wine through its focus on high-elevation vineyards, sparkling innovation, and adventurous branding, all grounded in an uncompromising commitment to quality and a belief that Colorado can produce wines worthy of the world stage.

Tapping Into the Spirit of Colorado Springs

The new Colorado Springs location brings Carboy’s wine philosophy to one of the state’s fastest-growing and most outdoor-driven communities. With a culture rooted in adventure, wellness, and connection, the Springs perfectly aligns with Carboy’s “Uncork Adventure” ethos, the belief that wine should be part of an active, exploratory lifestyle.

“Colorado Springs has long been on our radar,” said Kevin Webber, CEO of Carboy Winery. “It’s a community that shares our values; active, connected, and craving meaningful food and wine experiences. We’ve had this market in mind for years, and this expansion allows us to bring Colorado wine country closer to home for a whole new audience.”

Angelo’s Taverna: A Colorado Classic, Reimagined

The new location will also feature a full-service restaurant operated by Angelo’s Taverna, Carboy’s long-time culinary partner. The 9,000-square-foot operation will house Carboy’s tasting room on the rooftop, offering unobstructed views of Pikes Peak and a fully integrated food-and-wine experience.

A beloved Denver institution since 1974, Angelo’s Taverna has earned its place as one of Colorado’s most iconic Italian restaurants. Reimagined in 2013, Angelo’s continues to serve handmade classics; pastas, pizzas, and craft cocktails, while shucking thousands of fresh oysters delivered daily, all backed by one of the best oyster happy hours in the state. With locations in Denver and Littleton, and now expanding to Colorado Springs, Angelo’s remains true to its roots while continuing to push the envelope.

Vineyards, Sparkling Wine, and National Attention

Carboy’s production winery is based in Littleton, where it was first launched alongside Angelo’s Taverna, a concept that proved the power of pairing great wine with great food. Today, that foundation is supported by estate vineyards in the Grand Valley AVA, including two properties in Palisade acquired in 2021. In tandem with its still wine program, Carboy has made a name for itself with one of the most ambitious sparkling wine programs in the region, now produced at its dedicated Charmat facility in Palisade, one of the largest of its kind in the U.S.

The winery is a two-time winner of the Colorado Governor’s Cup and continues to explore fresh expressions of Colorado terroir through Albariño, Teroldego, Rhône whites, native ferments, and more.

A Community-Driven Brand with Momentum

Carboy’s rapid growth is rooted not only in innovation but in community. The winery’s thriving wine club, now thousands strong, spans the state and beyond, offering members exclusive access to new releases, vineyard-driven bottlings, and a deeper connection to Colorado wine.

With tasting rooms in Denver, Littleton, Palisade, and Breckenridge, and now expanding to Colorado Springs, Carboy is continuing to grow with intention, building spaces where wine, food, and people come together with purpose.
