Nic was born and raised in Washington State and attended Western Washington University where he was involved in research on the development of sugars in plants in the biochemistry department, in addition to being an active participant in the Men’s Rowing team. Fascinated by fermentation, Nic began shadowing at local breweries. Upon graduating with a degree inMolecular and Cellular Biology, he moved to Colorado to continue his passion for fermentation sciences, immersing himself in Denver’s local beer scene. Having been surrounded by craft cider and wine in his home state, the choice to join Carboy Winery and help bring recognition to an up-and-coming wine region was an easy one. We are fortunate to have him on staff with his expertise in fermentation science and thirst for knowledge in vinification.
