About This Location
Carboy Winery Denver opened in September of 2019 taking over the space previously occupied by long-time Capital Hill staple; Govnr’s Park Tavern. The newly gutted and renovated space includes a taproom, tasting room, private event space, private outdoor courtyard, a 19th century barn, and the adjoining Logan Street Restaurant. Each space has a distinct look and feel - a modern/industrial chic interior with vaulted ceilings, exposed brick, and a window into the production space where our brite tank system and traditional method sparkling wine program is on display.

The doors to Carboy Winery officially opened for business in September of 2016. The newly constructed 10,000 square foot campus off of south Santa Fe drive includes the wildly successful Angelo’s Taverna restaurant adjoining the winery tasting room and original wine production area. In August of 2019 expansion of the winery production space concluded with the addition of a breezeway, crushpad, and new 4,000 square foot winery on the south end of the building.
Carboy Winery Littleton is the flagship winery for the brand and the primary production facility charged with making all of the still wines for the company.

About This Location
In 1859 thousands of gold seekers flocked to Colorado, taking part in one of the greatest gold rushes in North American history. In 1861 on this very site, a tented structure known as Long’s Saloon opened for business as a local watering hole to thirsty miners with the permanent building being erected in 1879. In one form or another, The Gold Pan Saloon has stood for over 140 years playing host to gunfights, outlasting Prohibition, and boasting the longest continuous liquor license west of the Mississippi. Today, locals and visitors alike come for the camaraderie, to tell a few ski stories, listen to music, and enjoy some food and libations. In early 2018, Carboy purchased the Gold Pan Saloon keeping its 1879 aesthetic but converted the south dining room into a 1900s-era wine tasting room.

About This Location
Carboy Winery at Mt. Garfield Estate soft-opened on September 18th, 2021, before almost immediately beginning renovations to the old Garfield Estate Winery & Vineyard that was purchased six months prior. Renovation of the existing tasting room and adjacent estate house accompanied the construction of a new 4,000 square foot production facility and panoramic rooftop patio. Replanting and expansion of the 11.5 acre vineyard began in April of 2021 with completion of the replanting culminating in May of 2022.
Carboy Winery Palisade is the primary production facility charged with making all of the charmat method sparkling wine for the whole company.
2.5 miles southwest of Garfield Estate is K Vineyard (purchased in April 2021) which totals 13 acres of all non-vinifera grape varieties.
