Study In Bruschetta

Study In Bruschetta

You will need:

1 loaf French bread
Your choice of toppings (Recipes Follow)


Truffled Ricotta

1 C ricotta cheese
1 TB honey
1 TB black truffle slices
1 tsp salt
1 pinch  black pepper
.5 tsp chopped fresh thyme
Mix together all ingredients.


Black Pepper Honey

1 C honey
.5 tsp ground black pepper
1 pinch maldon sea salt
.5 tsp fresh rosemary, chopped
.5 tsp fresh thyme, chopped
1 TB hot water
Mix together all ingredients.

Tomato Bruschetta Mix

4 roma tomatoes, diced
1 TB garlic, fresh chopped
1 TB chopped fresh basil
2 TB olive oil blend
1 pinch salt
1 pinch black pepper
Mix together all ingredients.


Basil Pesto

1 C packed basil leaves, fresh
1 TB garlic, fresh, chopped
1 tb lemon juice
1 tsp salt
1 tsp black pepper
.25 C parmesan cheese
.25 C blended oil
Water, as needed
Combine all ingredients in food processor.
Pulse to combine, add a bit of cold water as necessary to make a smooth paste.


Roasted Mushroom Mix

1 C white mushrooms, sliced
1 C shiitakes, sliced
.25 C blended oil
1 tsp salt
1 tsp pepper
Toss together all ingredients.
Put on baking pan, bake at 350 for 10 minutes.
Let cool.


Caramelized Pears

3 pears, peeled, diced
3 TB brown sugar
1 TB corn syrup
Combine all ingredients in small sauce pan.
Cook on low heat until pears are caramelized and most of the liquid has cooked off.


Assembly:

Depending on your choice of topping the assembly will vary, however we begin by slicing the French bread into .5 in sliced and preheating the oven to 350.

For tomato bruschetta you will need 1 ball burrata cheese, mashed with a fork.

Brush bread with oil, toast till crisp.

Top with tomato mix, a dollop of burrata, and a bit of pesto.

For ricotta bruschetta; brush bread with oil, toast till crisp, smear toast with ricotta and top with the black pepper honey.

For roasted mushroom and gorgonzola cheese bruschetta; top bread with mushroom mix and a bit of gorgonzola cheese; bake until cheese is nice and melted.

For the goat cheese and pear bruschetta you will need some softened goat cheve and a bit of crispy pancetta.  Smear some cheve on the bread; toast until melted; top with caramelized pears and the crispy pancetta.
